초록

This study has dealt with a cooking books, 『Joseonmussangsinsikyorijebeop』, the material in the dialect from the Seoul area in the early 20th century. This study aims to analyze the vowel raising o(ㅗ)>u(ㅜ), /ə(ㅓ)/>/ɨ(ㅡ)/, /e(ㅔ)/>/i(ㅣ)/and the merge of /ə(ㅓ)/ and /ɨ(ㅡ)/, /e(ㅔ)/ and /æ(ㅐ)/. ə(ㅓ)>ɨ(ㅡ) appears at ending‘-dən(-던)’, it was written ‘-dɨn(-든)’. Unlike another dialects, ə(ㅓ)>ɨ(ㅡ) didn’t occur at postposition and adnominal endings. e(ㅔ)>i(ㅣ) was weak and impotent in the Seoul area. But, ɛ(ㅐ)>e(ㅔ) was more powerful in the in the middle of words. It was difficult to differentiate between the /e(ㅔ)/ and /æ(ㅐ)/ in the middle of words.
